I live in Thailand, which has a strong tradition of fermenting, and use of wild herbs and leaves.I also travel a lot to Burma, where there are similar traditions that vary across the diverse ethnic groups. I hope to be able to post some of this interesting food, its relation to culture and sustainability. There is a lot the western world can learn about sustainability from indigenous people and their practices.
